Easy Roasted Vegetable and Chicken Pasta {Luxury Pasta Recipe Contest- Win $250}

Easy Roasted Vegetable and Chicken Pasta

This dish is an incredibly healthy yet satisfying meal that the whole family will enjoy. It is simple to prepare, full of flavor, and tailors to your picky eaters.  Delicious chicken breast is quickly cooked while a variety of veggies are roasting in the oven.  Both are tossed with delicious, Luxury 100% Whole Grain pasta to create a tasty and filling meal. The secret to this dish that sets it apart is in the addition of three, simple ingredients added in at just the right time! You are going to LOVE cooking this meal for your family and friends, and they will love YOU for it!

Ingredients

  • 1 pound boneless, skinless chicken breast (can substitute a store bought rotisserie chicken for an even faster weeknight meal!)
  • 1 package 100% Whole Grain Luxury brand penne pasta
  • 1 red bell pepper, diced
  • 1 medium yellow onion, diced
  • 1 jar sun-dried tomatoes or any additional veggies you prefer (broccoli and asparagus are good!)
  • 1/2 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons coconut oil or olive oil
  • 2-3 tablespoons Cajun seasoning (to taste)
1. Preheat oven to 450 degrees. Pound out 1 pound boneless, skinless chicken breast until 1/2 inch thick. Season lightly with salt and pepper. Heat a skillet over medium heat. Add 1 tablespoon coconut or olive oil and add chicken. Cook 5-7 minutes per side or until completely cooked with an internal temperature of 165 degrees.
2. Chop bell peppers, onions, tomatoes, and any other veggies you chose into similar bite size pieces. Toss all the veggies with 1 tablespoon coconut oil or olive oil. Place on baking pan and roast for about 20 minutes.
3. While the veggies are roasting, fill a pot of water and bring it to a boil. Add favorite 100% Whole Grain Luxury pasta (I prefer penne) and cook according to package. When pasta is al dente, strain and immediately toss with 1/2 cup olive oil, 1/2 cup grated Parmesan cheese, 3 tablespoons favorite Cajun seasoning.
4. Dice chicken into bite sized pieces and add to pasta. Add the roasted veggies and mix together. Top with a little more Parmesan cheese and serve.
Serves 6 ; Prep time: 10 mins Cook time: 30mins
